I sliced some Hokkaido salmon, and it was easy to handle, sharp, and cooked faster than usual. This is a product I would like to recommend.
I was looking for an affordable stainless steel blade because I had been having a hard time using a regular Santoku knife to handle the fish I caught. I compared the cheap products and chose this product because I thought it was a Kai brand product. I bought some rockfish, blue sea bream, and black tang and tried to handle them, but I was very satisfied because I was able to easily handle them right out of the box. I don't know about durability yet, but considering the price, I have no complaints at all.
A good size to handle yellowtail. It also cuts well.
