Very sharp and a good knife for sushi
Love this knife!! we bought it to use on our hibachi grill, and it did not disappoint. I highly recommend. I already purchased another one for our son.
This is a bad ass knife! I first used it on a big grouper (which can be tough) and it sliced through like butter. My fillets were smooth and even, with very little waste. This blade has a bit of weight to it, it feels good to me, but some may find it unwieldy if you are used to a lighter knife. Don't work too fast, the cut is ultra sharp, and you could easily lose a finger.
Better than I thought, as advertised
I can't say how the blade will hold an edge but it is definitely a harder blade than most stainless kitchen knives. I was surprised to see the back of the blade is hollow ground in this price range as well. Over all, a good purchase.
