I don't know much about knives, but I can tell you that it is a total joy to use this knife! I'm eating a plant based diet and I chop lots of veggies and fruit everyday at every meal. This knife makes it easy, I look forward to preparing my meals now. Pineapples, tomatoes, cucumbers, beets, onions, chips everything so easy. And you can go super thin. Love it!
