30cm Carving Knife

After I smoked a 8 kg packer brisket, I commenced with the maiden application of this knife. This brisket turned out to have a tougher restaurantk than normal and required additional pressure to cut through. Once pass the restaurantk, the knife cut through both the point and flat portions with ease. This knife comes with a very much appreciated blade protector. Since this is my first use of this item, no longevity feedback can be provided. I would buy this knife again, if needed, and it would make a great and very well appreciated gift to anyone who needs to carve meat and lacks the proper cutlery.

Originally bought for prep work in the kitchen I worked in. Only had to sharpen once when a coworker used a Walmart brand sharpener and screwed up it's edge. Makes quick work of cutting chicken for cutlets or carving a whole bird. So sharp it sliced through a frozen chicken breast and cut me as well. Would recommend, be cautious though.
